Roast Beef Po’Boy

8 slices Fettayleh Roast Beef
2 medium size baguette
4 slices Gruyere cheese slices
3 large pickled gherkins, sliced thinly
½ cup shredded red cabbage
½ cup shredded white cabbage
½ cup finely julienned carrots
1tbs whole egg mayonnaise
1tsp sour cream
salt to taste
- In a bowl combine shredded red and white cabbage and carrots. Add mayonnaise and sour cream and mix well. Season with salt to taste.
- Slice baguettes lengthwise, to split open but not separate.
- Squeeze enough mustard sauce on inside of bread and begin to assemble slices of roast beef, Gruyere cheese and pickles evenly between the two baguettes.
- Divide coleslaw in half and assemble in the centre of the baguettes.
This can be made a few hours in advance and left to chill in the fridge until ready to be served.
